Simple Split Pea Soup


I found this recipe on the Weight Watchers website years ago. It originated as a crock pot recipe- just toss all in the crock pot and cook on low for 6 hours or high for 2 hours.

Simple Split Pea Soup:

12 Oz. Bag of dry Split Peas*
1 Clove Garlic(I use the frozen)
2 Carrots, cut into chunks
1 Onion, Diced
8 C. Chicken Broth*

Put all ingredients in large pot and simmer on low for 2-3 hours until smooth. You may need to add water when you reheat as the peas absorb the water.

This is always a hit and I often double or triple the recipe.

*I use either 500 grams of split peas with 10 C. broth OR I double and use 1 Kilo split peas and 20 C. broth and double everything else.

I almost always make split pea soup (or some variation, like with barley) for Shabbos. I'm going to give this a try, but with vegetable broth.

And, yes, you found the right recipe. That is my staple cookie. It calls for white sugar, but the amount is about half of what regular cookies call for. I have used maple syrup instead of sugar, and the cookies came out a bit too cake-like. I think it would work made with syrup (maybe silan) if you eliminated the other liquid (rice milk).

If you make the cookies really small, they get crisp. If you make them larger, they are soft.

You can also add wheat germ and ground flax, upping the nutrition and fiber even more.

The cookies don't taste whole-wheaty at all. But, because they are less sweet, some kids who are used to super sweet cookies don't like them as much as regular cookies. Toddlers, as a general rule, adore them, as do adults.
When my son was in preschool he couldn't get enough, and now my daughter is the same.

Why did it never occur to me to use vegetable broth? I am sure it would be good. Please report back!

I may need to switch the raisins to chocolate chips in your recipe as my kids won't eat raisins-do you see what I am up against??? I'll let you know what changes I make :)

Haha. I DO know what you are up against. I made my last batch with chocolate chips for the kids. My husband prefers just raisins, and I like both.
Actually, if you make them small and use chips, I think they taste like regular chocolate chip cookies, but with more flavor.

Oh, and BTW, I discovered a great extra benefit to these cookies. My daughter tends to be a bit . . . constipated (sorry, but no other way to put it), and she has been eating these cookies like crazy. They are really really helping keep her regular.
